Studies have found that Cauliflower helps to wage war against a host of diseases, including cancer. Helps you live longer and keeps the immunesystem strong and healthy because of the excellent sources of vitamins contained within. A quick recipe using cauliflower as the main course: The prep time on this one is only 15 minutes and the cook time is 25 minutes. So dinner can be served in about 40 minutes, after all we have busy lifestyles these days and the chore of cooking keeps most of us out of the kitchen. Roasted Garlic Cauliflower INGREDIENTS: 2-3 tablespoons minced garlic (for garlic lovers use more it takes great) 4 tablespoons olive oil 1 large head cauliflower, separated into florets 1 fresh lemon 1/2 cup grated Parmesan cheese salt and black pepper to taste 1 tablespoon chopped fresh parsley 1.Preheat the oven to 450 degrees F (220 degrees C). Grease a large casserole dish. 2.Place the olive oil and garlic in a large resealable bag. Add cauliflower, and shake to mix. Pour into the prepared casserole dish, and season with salt and pepper to taste. 3.Bake for 25 minutes, stirring halfway through. Top with Parmesan cheese and parsley, and broil for 3 to 5 minutes, until golden brown, remove and add fresh lemon to the finished dish. This is quick and easy and serves six, so that means you can put some away for later, or as a lunch treat the next day, by adding to a salad to give it more punch.
